Ingredients (serves 2)

  • 1 cup quinoa ; rinsed
  • 3 tablespoons maple syrup
  • 1 pinch salt
  • 2 teaspoons flax seed
  • 1 cup blueberries
  • 1/2 whole lemons ; zested
  • 2 cups milk

  • Directions

    1. Heat milk in a saucepan over medium heat until warm.
    2. Stir in rinsed quinoa and simmer over medium low heat until most of the liquid is absorbed, about 20 minutes.
    3. Remove from heat and stir in the salt, lemon zest and maple syrup.
    4. Fold in the the blueberries.
    5. Divide mixture into two bowls and top each with 1 teaspoon of flax seeds before serving.
