Ingredients (serves 2)
- Heat milk in a saucepan over medium heat until warm.
- Stir in rinsed quinoa and simmer over medium low heat until most of the liquid is absorbed, about 20 minutes.
- Remove from heat and stir in the salt, lemon zest and maple syrup.
- Fold in the the blueberries.
- Divide mixture into two bowls and top each with 1 teaspoon of flax seeds before serving.
