Ingredients (serves 4)

  • 0.25 parsley ; minced
  • 1/4 cup butter ; melted
  • 1/2 cup parmesan cheese ; grated
  • 20 crackers ; buttery (i.e. Ritz), crushed
  • 4 fillets catfish ; about 8 ounces each

    Combine cheese, parsley and crackers in a large shallow bowl. Dip fillets in butter and then in cracker mixture to coat. Lay fillets on an aluminum foil baking pan. Bake at 400 degress F for 15-20 minutes.
