Ingredients (serves 2)

  • 2 cups brown rice ; uncooked
  • 1 1/2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1/2 cup peas
  • 1/4 cup onions ; chopped
  • 1/2 cup red bell pepper ; diced
  • 1 teaspoon garlic powder
  • 1 egg(s) ; beaten
  • 1 1/2 tablespoons soy sauce

    Directions

     Prep: 10 min | Cook: 10 min | Ready in: 20 min
    1. Cook rice according to package directions. Drain and set aside.
    2. Heat oil vegetable oil in a wok or large skillet over medium-high heat.
    3. Add onion and saute for 1 minute.
    4. Add eggs, and scramble them.
    5. Stir in rice, remaining vegetables, sesame oil, soy sauce and garlic powder. If desired, you can stir in 1 cup of cooked beef, shrimp, or chicken.

    Very easy to make. The eggs are a nice touch.
