Ingredients (serves 6)

  • 1 egg(s) ; beaten
  • 2 cups potatoes ; shredded
  • 1/2 small onions ; shredded
  • 1/3 cup vegetable oil
  • 1 1/2 teaspoons salt
  • 2 tablespoons all-purpose flour

  • You will also need: cheesecloth


    1. Put shredded potatoes in a cheesecloth and wring out as much moisture as possible.
    2. In a large bowl, combine onion, potato, salt, egg and flour.
    3. Heat oil in a large skillet over medium-high heat until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down to make 1/4 to 1/2 inch thick patties.
    4. Cook, turning to brown on each side, working batches as necessary.
    5. Drain on paper towels. Serve with apple sauce and/or sour cream, if desired.
