Ingredients (serves 216)

½ 2x 3x Reset

  • 12 cups cantaloupe ; finely chopped
  • 3 pounds prosciutto ; finely sliced
  • 3 cups onions ; finely chopped
  • 3 cups red bell pepper ; finely chopped
  • 24 teaspoons olive oil
  • 12 teaspoons balsamic vinegar
  • 1 1/2 teaspoons salt
  • 12 dashes black pepper
  • 12 teaspoons lemon juice

  • Directions

    Combine all ingredients except prosciutto in a bowl. Mix well. Top crackers with a slices of proscuitto and a spoonful of salsa. Makes 18 servings, assuming two crackers with salsa for each serving.
