Ingredients (serves 18)

  • 1 cup cantaloupe ; finely chopped
  • 1/4 pound prosciutto ; finely sliced
  • 1/4 cup onions ; finely chopped
  • 1/4 cup red bell pepper ; finely chopped
  • 2 teaspoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1/8 teaspoon salt
  • 1 dash black pepper
  • 1 teaspoon lemon juice

  • Directions

    Combine all ingredients except prosciutto in a bowl. Mix well. Top crackers with a slices of proscuitto and a spoonful of salsa. Makes 18 servings, assuming two crackers with salsa for each serving.
