Ingredients (serves 36)

½ 2x 3x Reset

  • 2 cups cantaloupe ; finely chopped
  • 1/2 pound prosciutto ; finely sliced
  • 1/2 cup onions ; finely chopped
  • 1/2 cup red bell pepper ; finely chopped
  • 4 teaspoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon salt
  • 2 dashes black pepper
  • 2 teaspoons lemon juice

  • Directions

    Combine all ingredients except prosciutto in a bowl. Mix well. Top crackers with a slices of proscuitto and a spoonful of salsa. Makes 18 servings, assuming two crackers with salsa for each serving.
