  • 0.16666666666667 whole chili pepper ; chopped
  • 0.16666666666667 medium onions ; chopped
  • 0.041666666666667 pound chorizo ; chopped
  • 0.16666666666667 pound sweet potatoes ; peeled and diced
  • 0.16666666666667 large red bell pepper ; chopped
  • 4.8333333333333 ounces tomatoes ; canned, in juice
  • 0.33333333333333 clove garlic ; minced
  • 1/4 cup water
  • 0.16666666666667 whole mangoes ; peeled, diced, seeded
  • 0.041666666666667 cup cilantro ; chopped
  • 0.041666666666667 teaspoon salt
  • 5.3333333333333 ounces black beans ; canned, drained and rinsed
  • 0.16666666666667 tablespoon canola oil

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
