  • 1260 medium onions ; chopped
  • 315 pounds chorizo ; chopped
  • 1260 pounds sweet potatoes ; peeled and diced
  • 1260 large red bell pepper ; chopped
  • 36540 ounces tomatoes ; canned, in juice
  • 2520 cloves garlic ; minced
  • 1890 cups water
  • 1260 whole mangoes ; peeled, diced, seeded
  • 315 cups cilantro ; chopped
  • 315 teaspoons salt
  • 40320 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
