  • 1458 large red bell pepper ; chopped
  • 42282 ounces tomatoes ; canned, in juice
  • 2916 cloves garlic ; minced
  • 2187 cups water
  • 1458 whole mangoes ; peeled, diced, seeded
  • 364 1/2 cups cilantro ; chopped
  • 364 1/2 teaspoons salt
  • 46656 ounces black beans ; canned, drained and rinsed

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes.
    2. Add onion, and cook until tender.
    3. Add garlic, cooking until tender.
    4. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat.
    5. Simmer, covered until sweet potatoes are tender, about 15 minutes.
    6. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
