Bring this macaroni salad to a picnic, cook-out, or just sit on a couch and eat a bowl of it like I do.

Note: This adjusts ingredient amounts but not amounts mentioned in the Directions.

Ingredients (serves 6)

  • 2 cups macaroni ; cooked, rinsed
  • 3/4 teaspoon mustard powder
  • 1/2 cup mayonnaise
  • 1/2 cup tomatoes ; diced
  • 1/3 cup celery ; diced
  • 1 1/2 tablespoons sugar
  • 1 1/2 tablespoons cider vinegar
  • 1/2 teaspoon kosher salt ; or to taste
  • black pepper ; to taste
  • 1/4 cup onions ; diced
  • sour cream
  • 1 tablespoon parsley ; fresh, minced

  • Directions

    1. Soak onion in cold water for 5 minutes, and rain.
    2. Combine macaroni, onion, celery, tomato and parsley in a large bowl.
    3. Whisk together the remaining ingredients in a separate small bowl, making a dressing.
    4. Stir the dressing into the macaroni mixture and serve.  
    Store in the refrigerator, covered, for up to 3 days.
