  • 18 pounds sausage
  • 18 cups olive oil
  • 18 onions
  • 18 cloves garlic
  • 18 teaspoons chili powder
  • 9 teaspoons cumin
  • 504 ounces vegetable broth ; 2 14 ounce cans
  • 270 ounces black beans ; 1 15 ounce can
  • 18 cups corn
  • 9 cups red bell pepper
  • 18 cups tortilla chips ; crushed

    Directions

    In a large saucepan,brown sausage in olive oil. Add onion, garlic, chili powder and cumin. Cook 3 mins. Add remaining ingredients. Bring mixture to boiling, reduce heat and simmer 5 mins. to blend flavors. Garnish with crushed tortilla chips.
