A loaded baked potato in soup form, made in a slow cooker.

Directions
Combine the onions, potatoes, chicken broth, butter, salt and pepper in a 5 quart slow cooker. Cover, and cook on high heat for 4 hours or on low heat for 8 hours, until the potatoes are tender.
Mash the mixture until the soup is slightly thickened and potatoes are coarsely mashed.
Stir in the chives, cheddar cheese, and half and half.
Top with the sour cream and additional cheddar cheese and bacon, before serving.
