  • monterey jack cheese ; shredded
  • 648 teaspoons chili powder
  • 162 pounds chicken ; boneless breast. cooked, cut into bite size pieces
  • 972 cloves garlic ; minced
  • 324 tablespoons olive oil
  • 324 onions ; chopped
  • 6480 ounces tomatoes ; crushed
  • 3402 ounces chicken broth
  • 4860 ounces black beans ; drained
  • 324 teaspoons oregano ; dried
  • 1296 ounces chili pepper ; green, chopped
  • 81 cups cilantro ; fresh, chopped
  • 324 cups corn ; kernels, cooked
  • 324 cups hominy
  • 405 cups water
  • tortilla chips ; crushed
  • green onions ; chopped

  • Directions

    Heat oil over medium heat in a large pot. Saute garlic and onion until soft. Add oregano, chili powder, broth, water, and tomotoes. Bring to a boil and simmer for 5 minutes. Stir in chiles, hominy, cilantro, beans, chicken and corn. Simmer an additional 10 minutes. Spoon soup into serving bowls. Top with cheese, green onions and crushed tortilla chips. Serves 8.
