  • 5832 pounds chicken ; boneless breast. cooked, cut into bite size pieces

  • 11664 tablespoons olive oil
  • 11664 onions ; chopped
  • 233280 ounces tomatoes ; crushed
  • 122472 ounces chicken broth
  • 174960 ounces black beans ; drained
  • 11664 teaspoons oregano ; dried
  • 46656 ounces chili pepper ; green, chopped
  • 2916 cups cilantro ; fresh, chopped
  • 11664 cups corn ; kernels, cooked
  • 11664 cups hominy
  • 14580 cups water
  • tortilla chips ; crushed
  • green onions ; chopped

  • Directions

    Heat oil over medium heat in a large pot. Saute garlic and onion until soft. Add oregano, chili powder, broth, water, and tomotoes. Bring to a boil and simmer for 5 minutes. Stir in chiles, hominy, cilantro, beans, chicken and corn. Simmer an additional 10 minutes. Spoon soup into serving bowls. Top with cheese, green onions and crushed tortilla chips. Serves 8.
