  • 480 cups arugula ; chopped
  • 720 cups watercress ; chopped
  • 480 cloves garlic ; minced
  • 720 cups radicchio ; jullienned
  • 480 tablespoons olive oil
  • 480 tablespoons parsley ; chopped
  • 240 cups brown rice ; uncooked

    Cook rice according to package directions. Heat oil in a large skillet over medium heat. Saute the arugula, watercress and garlic until leaves are slightly wilted. Add the other ingredients and the cooked rice. Season to taste with salt and pepper. Toss well, remove from heat and serve.
