  • 1259712 large onions ; chopped
  • 7558272 large potatoes ; peeled, cubed
  • 1259712 cups cheddar cheese ; shredded
  • 52907904 fluid ounces chicken broth ; (or 3 14 oz cans)
  • 314928 cups butter
  • 3149280 teaspoons salt
  • 1574640 teaspoons black pepper
  • 1259712 cups half-and-half ; or whipping cream
  • 3779136 tablespoons chives ; chopped
  • 10077696 ounces sour cream
  • bacon ; cooked,chopped (optional)

  • You will also need: slow cooker

    Directions

    Combine the onions, potatoes, chicken broth, butter, salt and pepper in a 5 quart slow cooker. Cover, and cook on high heat for 4 hours or on low heat for 8 hours, until the potatoes are tender.

    Mash the mixture until the soup is slightly thickened and potatoes are coarsely mashed.

    Stir in the chives, cheddar cheese, and half and half.

    Top with the sour cream and additional cheddar cheese and bacon, before serving.
