Ingredients (serves 46656)

  • 5832 large onions ; chopped
  • 34992 large potatoes ; peeled, cubed
  • 5832 cups cheddar cheese ; shredded
  • 244944 fluid ounces chicken broth ; (or 3 14 oz cans)
  • 1458 cups butter
  • 14580 teaspoons salt
  • 7290 teaspoons black pepper
  • 5832 cups half-and-half ; or whipping cream
  • 17496 tablespoons chives ; chopped
  • 46656 ounces sour cream
  • bacon ; cooked,chopped (optional)

  • You will also need: slow cooker

    Directions

    Combine the onions, potatoes, chicken broth, butter, salt and pepper in a 5 quart slow cooker. Cover, and cook on high heat for 4 hours or on low heat for 8 hours, until the potatoes are tender.

    Mash the mixture until the soup is slightly thickened and potatoes are coarsely mashed.

    Stir in the chives, cheddar cheese, and half and half.

    Top with the sour cream and additional cheddar cheese and bacon, before serving.
